Light and Creamy Cauliflower Alfredo Linguine

Light and Creamy Cauliflower Alfredo Linguine
Alfredo pasta is such a decadent treat with all of the butter, cream and parmesan cheese and although I want to be able to enjoy it every night I know that's probably not the best idea... So how about a lighter and healthier version that you can eat every night? How about one that uses a cauliflower sauce that's just as creamy and has all of that great butter, parmesan and garlic flavour? This light and creamy cauliflower alfredo linguine is of course not quite the same as alfredo linguine but it's a really amazing, guilt-free, alternative that I enjoy far more frequently! In addition to being super tasty it only takes a few minutes to make so it's perfect for weeknight dinners and it's impressive enough for guests! Want to make it a little more special? try adding something like shrimp or mushrooms, etc. or flavour the sauce with the addition of pureed roasted red peppers or sundried tomatoes, etc.
