Alfredo pasta is such a decadent treat with all of the butter, cream and parmesan cheese and although I want to be able to enjoy it every night I know that’s probably not the best idea… So how about a lighter and healthier version that you can eat every night? How about one that uses a cauliflower sauce that’s just as creamy and has all of that great butter, parmesan and garlic flavour? This light and creamy cauliflower alfredo linguine is of course not quite the same as alfredo linguine but it’s a really amazing, guilt-free, alternative that I enjoy far more frequently! In addition to being super tasty it only takes a few minutes to make so it’s perfect for weeknight dinners and it’s impressive enough for guests! Want to make it a little more special? try adding something like shrimp or mushrooms, etc. or flavour the sauce with the addition of pureed roasted red peppers or sundried tomatoes, etc.
Light and Creamy Cauliflower Alfredo Linguine
A quick and easy, light and healthy cauliflower alfredo pasta!
ingredients
- 8 ounces linguine (or other pasta)(gluten-free for gluten-free)
- 2 cups cauliflower sauce
- 1 cup parmigiano reggiano (parmesan), grated
directions
- Cook the pasta as directed on the package.
- Heat the cauliflower sauce in a sauce pan, add the parmesan and cook until it melts.
Option: Rediuce the recipe by half for the perfect meal for 2!
Option: Add meat like chicken, shrimp, etc.
Option: Add other seasonings like nutmeg, cayenne, etc.
Option: Add other flavours like roasted red peppers, pumpkin, sun dried tomatoes, mushrooms, etc.

I like this recipe, love the parmesan part. I am however not a big fan of cauliflower, so I think I will replace it by broccoli. Let me know if you think it will work with broccoli.

Mitanti Ghosh: I had not thought of trying this with broccoli but now I think that I am going to have to try it! Broccoli will have more flavour and texture but it it would be good in it's own right! I think that cheddar might go nice with it!
