French toast is one of my favourite breakfast treats! It’s basically bread that’s dipped in an egg an milk mixture and the pan fried until crispy on the outside while remaining nice and moist on the inside; it’s often served with syrup! Basic french toast is amazing but you can also kick things up by adding flavours or even by forming a ‘sandwich’ with two slices of bread and stuffing it before dipping in the egg mixture and frying! This french toast is stuffed with a caramelized banana cheesecake filling and it’s coated with toasted coconut flakes before being served with a coconut syrup! Yum! The coconut syrup is super easy to make, it’s one can of coconut milk with sugar that’s melted into it! The filling is made with caramelized bananas (slices of banana simmered in caramel sauce) that’s mixed with cream cheese. The french toast is made by spreading the the filling in between two slices of bread, dipping both sides of the sandwich in the egg mixture before pressing it into sweetened coconut flakes and frying it in salted butter until golden brown and crispy. The resulting combination of crispy coconut coated french toast with the moist inside, caramelized banana cheesecake filling, sweet coconut syrup all offset by the slight saltiness left from frying in butter, is simply magical! This french toast is perfect for any special breakfast or brunch and mom is sure to be pleased if you make it for her on Mother’s Day!
Caramelized Banana Cheesecake Stuffed Coconut French Toast
Golden brown, coconut crusted french toast, stuffed with caramelized banana cheesecake and smothered in coconut syrup!
ingredients
- 1 (14 ounce) can coconut milk
- 1/2 cup sugar
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 1 ripe banana, peeled and sliced
- 8 ounces cream cheese, warmed
- 3 large eggs
- 1/4 cup coconut milk
- 1 teaspoon ground cinnamon (optional)
- 1/2 teaspoon vanilla extract (optional)
- 1 1/2 cup sweetened coconut flakes
- 8 slices bread (brioche, challah, french bread, or italian bread)
- 2 tablespoons salted butter

- Heat the coconut milk and sugar in a small saucepan and simmer until the sugar has melted, about 5 minutes.
- Melt the butter and brown sugar in a pan over medium heat until the sugar has melted into the butter and everything is simmering, about 5 minutes.
- Add the bananas, mix, bring back to a simmer and cook until the bananas are a nice golden brown and caramelized, about 5-10 minutes.
- Mix the caramelized bananas into the cream cheese.
- Mix the eggs, coconut milk, cinnamon, and vanilla and place in a wide bowl or dish.
- Place the coconut flakes in another wide bowl or dish.
- Divide the caramelized cheesecake mixture between the slices of bread forming sandwiches.
- Melt the butter in a frying pan over medium heat.
- Dip the sandwiches in the egg mixture to cover both sides, shake off the excess, and dip in the coconut flakes.
- Fry in the melted butter until golden brown, about 2 minutes per side.
- Enjoy the french toast smothered in coconut syrup.

Option: Serve topped with sliced fresh bananas or caramelized bananas.

this is nuts, in the best of ways, but so over the top I don’t know when I can bring myself to indulge in this, very creative french toast, maybe the most creative I’ve seen!
