With summer here I thought that it was the perfect time to pull out one of my favourite summer recipes, this creamy dilled cucumber salad! This salad could not be easier, it’s pretty much just slice up some cucumber and onions and toss them in a creamy mixture of yogurt (or sour cream or mayo), lemon juice and garlic and you’re good to go! In addition to being super easy to make you really can’t go wrong with a cool and juicy cucumber salad on hot summer days! The cucumbers are just bursting with juices and this creamy dilled cucumber salad is sure to keep you nice and cool and hydrated this summer, especially when served chilled from the fridge!
Creamy Cucumber Salad
A cool and creamy cucumber and dill salad that is perfect for hot summer days!
ingredients
- 2 large cucumbers, sliced
- 1/4 cup red onion, sliced
- 1/4 cup greek yogurt (or sour cream or mayo or combination)
- 1 lemon, juice and zest (or 1/4 cup white vinegar)
- 2 tablespoons dill, chopped
- salt and pepper to taste
- 1 clove garlic, grated (optional)
directions
- Mix everything and enjoy!
Option: Add a teaspoon or so of sugar or honey for a hint of sweetness!.

I'm a sucker for sour cream and dill cukes. I have a similar recipe that I add a dollop real mayo and a dash of cayenne pepper to for an added kick.

I love this salad~ It is a summertime fave! We almost always serve it with our teriyaki turkey burgers, the creamy-coolness seems to compiment the tangy-sweet teriyaki perfectly!

This salad was always on the table at my Hungarian grandmother's house. She served several variations of it, adding chopped fresh tomato, omitting the sour cream and dill and adding green onions. Her version always had vinegar, though. It's particularly refreshing when served with fatty/heavy things like fried chicken, hamburgers or grilled sausage. Thanks Kevin!

Red onion is such a favorite in salads of any kind. Even when you have something as simple and pure as cukes, the spicy flavor of a red onion really makes it pop. It's great!

If you want your cucumber to be crisp, salt it generously, wait 30 minutes, drain and rinse. If you do this your cucumber salad won’t get so watery and mushy. Also, I partially peel and seed the cucumber to minimize wateriness. The dressing sounds good if not watered down with the moisture that is released from the cucumbers after being dressed.

This was easy to make and very tasty. I used sour cream and dill paste (the fresh dill at the grocer looked like it had seen better days) which added a nice flavour. Served it with meatloaf and grilled potatoes.

You can use any type of cucumber. I usually go with the English style of cucumber but garden/field cucumbers are also really nice! Enjoy!
