This is basically a cross between a ham and cheese croissant with french toast that’s made casserole style in one pan that’s simply baked! The recipe is as simple as placing bits of croissant, ham and cheese in a casserole pan, soaking it in a seasoned mixture of eggs and milk, before baking it! You can enjoy this casserole as a savoury meal or you can pour maple syrup over it or, my favourite, topped with a sweet and tangy honey mustard sauce! Yum! Ham and Cheese Croissant Casserole with Honey Mustard Sauce
A ham and cheese breakfast casserole smothered in a sweet and tangy honey mustard sauce.
ingredients
- 12 cups (about 12-16) croissants, torn/cut into large pieces
- 6 ounces ham (deli sliced or cubed)
- 8 ounces cheddar cheese (or gruyere or swiss), sliced or shredded
- 1 1/2 cups milk (or half and half or cream)
- 6 large eggs, lightly beaten
- 2 teaspoons thyme, chopped (or 1 teaspoon dried thyme)
- 1 tablespoon dijon mustard (optional)
- 1 tablespoon grainy mustard (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/8 teaspoon nutmeg (optional)
- 1 pinch cayenne (optional)
- 1/4 cup honey mustard sauce (optional)
directions
- Layer the croissants, ham and cheese in a 13×9 inch baking pan.
- Mix the milk, eggs, thyme, mustards, salt, pepper, nutmeg, and cayenne, pour over the croissants in the pan and let it sit for 20 minutes.
- Cove in foil and bake in a preheated 350F/180C oven for 30 minutes before removing the foil and baking for another 10-15 minutes.
- Enjoy drizzled with honey mustard sauce.
Option: Sprinkle 2 tablespoons of everything bagel spice over the top of the casserole before baking.

Made this for Easter breakfast. I used black forest lunchmeat, ham and gruyere cheese. I did it sit overnight for easy prep after church. Also made the honey mustard sauce which was very good and complimentary to the casserole. Can’t wait to make again for my adult children when they come home next!
