One of the best things about the ham dinner that I made over the holidays was the leftovers. I still had some ham left in the freezer and I pulled some of it out this week. This is a really simple dish and yet it is full of flavour. It is also quick enough to make on weekdays. The first time I made this I had some salsa and sour cream on the side. These breakfast burritos were tasty enough and the salsa was not required.

yum, i love breakfast burritos! i recently bought some of those “flat out wraps” and those are also great for things like this.
This is so much better than eating at “Rotten Ronnie’s” or any other fast good joint for breakfast.
i love a good breakfast burrito. great way to use up leftover ham!
Very nice, I would have enjoyed this for Brunch today!
Squeal!! I love it. Burritos claimed my heart long ago–and yours looks fabuloso!
Ham and egg – looks like perfect ingredients for Chinese fried rice too!
I just pulled out my leftover Christmas ham too! I’m making a lentil soup, though your buritto looks much better!
Kevin,
I was away only for a while visiting my sister in Bristol and you made so many delicious dishes….

Have a wonderful weekend, Margot 🙂
Yum! Thank you for the recipe and the idea for breakfast.
How did you fold the tortilla? And did you grill it?
