Mexican Stuffed Spaghetti Squash

Mexican Stuffed Spaghetti Squash

Tender spaghetti squash stuffed with a Mexican style, tomato, bean, corn and pepper sauce, and topped with plenty of melted cheese!

One of my favourite fall foods is spaghetti squash and it’s always fun to stuff them with something tasty and make a meal of it! This recipe takes a Mexican themed filling with onions, peppers, tomatoes, and beans and places it into spaghetti squash before topping with plenty of melted cheese. The first step is to cut the squash in half, scoop out the seeds, brush it with oil and roast it until tender. The inner flesh is then fluffed up and the filling is added before returning it to the oven to bake until the cheese is melted.

Tender spaghetti squash stuffed with a Mexican style, tomato, bean, corn and pepper sauce, and topped with plenty of melted cheese!

ingredients
  • 2 small spaghetti squash, cut in half and seeded
  • 1 tablespoon oil
  • salt and pepper to taste
  • 1 tablespoon oil
  • 1 small onion, diced
  • 1 small bell pepper, diced
  • 2 cloves garlic, diced
  • 1 tablespoon taco seasoning (link)
  • 1 (15 ounce) can diced tomatoes (or salsa)
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 2 cups cheese (such as cheddar, monterey jack, mozzarella), shredded
directions
  1. Brush the inner flesh of the spaghetti squash with oil, season with salt and pepper and roast, skin side up, in a preheated 400F/200C oven until tender, about 30 minutes.
  2. Meanwhile, heat the oil in a pan over medium heat, add the onions and peppers and cook until tender, about 7-10 minutes.
  3. Add the garlic and taco seasoning, and cook until fragrant, about a minute.
  4. Add the tomatoes and beans, bring to a boil and simmer until the liquid has reduced, about 5 minutes.
  5. Add the corn and cook until warmed, about 3 minutes, before setting aside.
  6. When the spaghetti squash is done, flake/fluff the inner flesh with a fork, fill with the sauce and top with the cheese.
  7. Return to the oven and cook until the cheese melts, about 5-10 minutes.
Option: Add 1/2 pound ground beef, pork, or turkey! Cook it first, then add the onions and bell peppers.
Option: Serve garnished with your favourite taco style toppings such as: cilantro, sour cream, cheese, salsa, pico de gallo, guacamole, avocado, etc.
