Salsa verde (a simple salsa made with tomatillos and jalapenos) and pickles are two of my favourite foods and they get even better when combined! This pickle salsa verde is the combination of the two recipes where tomatillos, jalapenos, onion and garlic are roasted before being pureed, along with pickles and cilantro! You can enjoy this salsa with tortilla chips or use it in tacos, burritos, nachos, etc!
Pickle Salsa Verde
A tasty salsa verde with pickles!
ingredients
- 1 pound tomatillos, husks removed
- 1 jalapeno pepper, cut in half and seeded
- 1 small onion, quartered
- 2 cloves garlic
- 1 pound pickles
- 1/4 cup pickle juice
- 1 lime, juice and zest
- 1/2 cup cilantro
- salt to taste
directions
- Roast the tomatillos, jalapenos, onion and garlic under a broiler, or over open flame, or in a heavy bottom pan over high heat, until slightly blackened or charred on all sides.
- Place everything into a food processor and puree.
Option: Skip step one and do it raw!
Option: Add an avocado for creaminess!
