When I think about summer holidays and food I tend to think of barbecues, grilling and burgers and with the first summer holiday coming up I was just itching to try out these sundried tomato caprese turkey burgers with balsamic caramelized onions. I recently came across the idea for sundried tomato burgers on Bev Cooks and given that I am a big fan of both the sundried tomatoes and the fresh basil that these burgers are stuffed with, they were a must make recipe! My first thought for these burgers was a caprese salad theme with tomatoes, basil, fresh mozzarella and balsamic vinegar and since the patties already included the tomatoes and basil all that was left was to top them off with some melted fresh mozzarella and some balsamic vinegar. Instead of just drizzling a balsamic reduction or glaze onto the burgers I caramelized some onions and added the balsamic vinegar to them before throwing them on top of the melted cheese! In my mind I burger just isn’t a burger without some bacon so I fried up some pancetta (an Italian style bacon) until crispy and added it along with some cool and creamy slices of avocado. I finished the burgers off with a topping of fresh basil which adds even more summery goodness!
If you only try one new burger recipe this summer it should definitely be these sundried tomato caprese turkey burgers with balsamic caramelized onions! The sundried tomato turkey patties are moist and just packed with flavour, the salty pancetta goes perfectly with the sweet and tart balsamic caramelized onions and you can never go wrong with plenty of melted cheese!

I used oil packed sun-dried tomatoes and the oil on them helps keep these turkey burgers nice and moist and juicy!
Sundried Tomato Caprese Turkey Burgers with Balsamic Caramelized Onions
Juicy sundried tomato caprese turkey burgers smothered in melted mozzarella and balsamic caramelized onions that are just packed with the flavours of summer!
ingredients
- 10 sundried tomatoes
- 10 leaves basil
- 3 cloves garlic
- 1/4 cup parmigiano reggiano (parmesan), grated
- 1 teaspoon italian seasoning
- salt and pepper to taste
- 1 pound ground turkey
- 1/4 cup breadcrumbs
- 1 tablespoon oil
- 2 red onions, thinly sliced
- 2 tablespoons balsamic vinegar
- 4 ounces pancetta, thinly sliced
- 4 buns, optionally lightly toasted (gluten free for gluten free)
- 8 ounces fresh mozzarella, sliced
- 1 large avocado, sliced
- 12 basil leaves

- Puree the sundried tomatoes, basil and garlic in a food processor, mix it into the remaining ingredients, form four patties and set aside.
- Heat the oil in a pan over medium-high heat, add the onions and cook, stirring, until they turn a deep golden brown, about 30 minutes, before mixing in the balsamic vinegar, cooking until most of it has disappeared and setting aside.
- Cook the pancetta until crispy and set aside.
- Heat the grill to medium-high heat and cook the patties, about 4-5 minutes per side before topping with the mozzarella slices and letting it cook until it starts to melt, about 2-3 minutes.
- Assemble the sundried tomato burgers in buns with pancetta, avocado, patties, balsamic caramelized onions and basil.

Just made these for dinner and it was delicious! Only change was to add 1 egg (to the full lb of turkey) just because we like it. This was amazing! My husband loves turkey burgers and this is one of his favorites now. Thank you!
