Zucchini Bread with Roasted Red Peppers and Feta, Slice

The farmers market was overflowing with zucchini on the weekend and I picked some up. Ever since I discovered quick bread I have wanted to try making a zucchini quick bread. Though zucchini are typically available all year round I had been waiting for it to be in season locally and now was my chance. I had been wanting to try a savoury zucchini bread but when I searched the web I was not able to find many savoury zucchini bread recipes and none of the ones that I did find interested me. I was a bit disappointed but it was no problem as I always enjoy coming up with my own recipes. I started with one of my banana bread recipes as a base and dropped all of the sugar and spices. Of course, the bananas were replaced with zucchini and I added some roasted red peppers, garlic, feta and oregano for some flavour. Since balsamic vinegar goes well with roasted red peppers I added some of that as well. The next step was to replace the butter with olive oil to make it a bit healthier. Since I was adding a lot of solids to the recipe I cut back a bit on the flour and replaced some of it with whole wheat flour. With that, I had my recipe for a savoury zucchini bread.

The zucchini bread was just as easy to make as any other quick bread, which is pretty easy. The aroma coming from the oven while it baked was really amazing. I was barely able to restrain myself from digging into it right as it came out of the oven as I wanted to take a few photos of the loaf. As soon as that was done I had it sliced open really quick. The zucchini bread with roasted red peppers and feta was so good! It was nice and light and moist and full of flavour. The peppers were nice pockets of juicy moistness in the bread and it was always nice to bite into some of the salty feta. The zucchini bread was great all by itself but I had some leftover hummus and decided to try the zucchini bread with some of that along with some fresh tomato and cucumber slices. The combination of the flavours of the zucchini bread along with the creaminess of the hummus and the cool juiciness of the tomatoes and the cucumbers was really nice. With a savoury zucchini bread down, I am now looking forward to trying a more traditional sweet zucchini bread.

Zucchini Bread with Roasted Red Peppers and Feta

Zucchini Bread with Roasted Red Peppers and Feta

Prep Time: 20 minutes Cook Time: 1 hour Total Time: 1 hour 20 minutes Servings: 6
ingredients
  • 1 1/2 cups zucchini (grated, squeezed and drained)
  • 2 roasted red peppers (chopped)
  • 2 cloves garlic (grated)
  • 1/2 cup feta (crumbled)
  • 1 teaspoon oregano
  • 2 tablespoon balsamic vinegar
  • 1/4 cup olive oil
  • 2 eggs
  • 1 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
directions
  1. Mix the zucchini, roasted red pepper, garlic, feta, oregano, balsamic vinegar, olive oil and eggs in a large bowl.
  2. Mix the flour, salt, baking soda, baking powder and oregano in a bowl.
  3. Mix the dry ingredients into the wet ingredients.
  4. Pour the batter into a greased 9×5 inch loaf pan.
  5. Bake in a preheated 350F/180C oven until a toothpick pushed into the center comes out clean, about 1 hour.

    Great idea. I’ve never made zucchini bread but I do have fresh zucchinis from my CSA. I was going to make a casserole tonight but I think I’ll leave one to try a zucchini bread.

    when I searched the web I was not able to find many savoury zucchini bread recipes
    Aw, don’t shy away from the sweet ones. My Mom used to make a real kickass zucchini chocolate bread. I miss it.

    Oh wow, that is something I would have never thought of. My favorite way to have zucchini is in chocolate cupcakes…delish! I bet they’ll have some at the Farmer’s Market this Saturday too, I’ll have to be on the lookout. Need to find a GF version so I can enjoy it too. 🙂

    A savory Zucchini bread sounds better to me than the sweet variety. I’ll have to add that to my list. In the Winter, I often serve soups with some kind of home made bread and in the Summer it’s with salads and fresh produce. You can never have too many bread recipes. Beautiful pictures.

    This looks fantastic. I don’t eat eggs, so I’m going to try baking this tonight with a ground flaxseed/water mixture as an egg replacer. I’ll let you know how it goes. Oh, and I’m serving it with carrot soup. Yum! I think it’ll make a great match.

    I tried making this, but it turned out too wet: should I have squeezed the grated zucchini before adding it, and how big is a "large" zucchini anyway? Maybe mine was too large! It tasted fab though.

    Julia: Sorry about that. Zucchini can vary greatly in size. I have updated the recipe. I find that some zucchini's are wetter than others so it is probably a good idea to squeeze and drain it before using it.

    Thank you so much for the recipe. I tried it and it came out wonderful. I have a couple of zucchini plants (and believe me i never run out of zucchinis during the season and will be glad when winter comes in:)) and didn't want a sweet bread and this recipe is just perfect. I don't like feta cheese so i replaced it with cheddar and also added some green chillies, cilantro and ginger (all blended in a food processor) to make it a little spicier. And your method to roast red peppers work great too!!!

    I've made this bread twice, and found that it is especially delicious with Tzitziki (yogurt, mint, garlic, dill, cucumber sauce).

    that is SO gorgeous! it's hot here in the pacific northwest so i've been baking my savory zucchini loafs at night and then storing them in the fridge overnight. the next morning/afternoon they are dense, moist, and extremely flavorful.

    This is incredible bread! It is like eating Thanksgiving turkey stuffing without all the fuss. I don't know if it is my oven or the Feta,?…but I had to cook the loaf about 10 minutes longer, to get the center done. Because I have fresh rosemary in our yard, I substituted 2 teaspoons of finely minced fresh rosemary for the oregano. It turned out fantastic. Thanks for sharing your recipe, you should go into business.

    aaha..just figured out why the bread needed a little longer to cook. I didn't have whole wheat flour on hand so I used white. Still turned out outrageously good!!

    Unknown: Glad you enjoyed it! The amount of liquid in zucchini can vary a lot and that will change the baking time. The toothpick test is the best way to know when it is done.

    Love this yeast free bread! I skipped out on the fetta and capsicum as I did not have them and replaced the balsamic with apple cider as well as leaving out the salt. Still worked a treat! Served it up to friends at a dinner and the lot was consumed! Oh I also coated it with sunflower kernels which made the crust delicious! Thanks so much! Going to make it tonight with sundried tomatoes for a treat 🙂
