Asiago Roasted Mushroom Mashed Cauliflower

Tasty roasted mushroom cauliflower mashed ‘potatoes’ with plenty of asiago cheese!

I have been enjoying cauliflower mashed
potatoes ever since I first tried them and today a have a really tasty asiago roasted mushroom mashed cauliflower to share with you! Mashed cauliflower is basically cooked cauliflower that is mashed and served as if they were mashed potatoes, a lighter, low-carb version! Normally I steam the cauliflower for mashed cauliflower but roasting it, which adds a ton of flavour, is always a good option and while you’re roasting the cauliflower you might as well through something else, like mushrooms, into the oven to roast with it! The mushroom and cauliflower flavour combo is a good one so it’s only natural for me to think about combining them in mashed cauliflower! This recipe is as easy to make as roasting the cauliflower and mushrooms and pureeing them in a food processor along with some butter, milk and miso paste along with plenty of asiago cheese that melts right into it! This asiago roasted mushroom mashed cauliflower is a super simple and tasty side dish for any meal!

Asiago Roasted Mushroom Mashed Cauliflower

Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Servings: 6

Tasty roasted mushroom cauliflower mashed ‘potatoes’ with plenty of asiago cheese!

ingredients
  • 1 medium head cauliflower, cut into small florets
  • 1 pound mushrooms, halved
  • 1 tablespoon oil
  • salt and peppet to taste
  • 2 tablespoons butter
  • 1 tablespoon white miso paste (optional)
  • milk or cream to taste
  • 1 cup asiago, grated
directions
  1. Toss the cauliflower and mushrooms in the oil, salt and pepper, arrange in a single layer on a baking sheet and roast in a preheated 400F/200C oven until lightly golden brown, about 20-30 minutes, mixing half way through.
  2. Puree everything in a food processor until smooth adding enough milk to get to the desire consistency!
Option: Add thyme to the oil, salt and pepper before roasting.
Option: Replace the asiago with another cheese like parmesan!
