I certainly do enjoy BLTs and with all of the beautiful local field beefsteak tomatoes around, I have been making them a lot! It can sometimes be difficult to imagine improving on an already amazing sandwich like the BLT but adding an egg is a good place to start! There are a lot of ways to add an egg to a BLT but the first thought that comes to my mind is in the form of a quick and easy egg salad made with creamy mayo and a touch of a tangy mustard. I guess that once you add egg to the mix it is no longer a BLT but it becomes a BELT sandwich! Of course an even easier way to add an egg to a BLT is to simply add a fried egg and with that runny yolk it is very hard to resist!
Bacon Egg Lettuce Tomato Sandwich (aka BELT Sandwich)
BLT (aka Bacon Lettuce and Tomato) sandwiches combined with egg salad sandwiches to create a glorious new sandwich that is even better!
ingredients
- 4 buns, cut in half (or 8 slices of bread)
- 1 cup egg salad
- 8+ slices bacon
- 1 large tomato, sliced
- 4+ leaves lettuce
directions
- Cook the bacon, assemble the sandwiches and enjoy!
Option: lightly toast the buns or bread.

This is a great little sandwich. I make these from time to time when I am in the middle of a movie and I get slightly hungry. I put the film on pause and make myself a BLT or a BELT. I don't know who invented them but they are wonderful. It must have been the same chap who invented the club. Have you ever heard of a 'chip butty' from the UK?

Been making bacon, egg, lettuce and tomato since I was very young. Close to 60 years but just hard boil the egg (not too dry) and slice it onto sandwich.
