Chopped cheese sandwiches, sandwiches with “chopped” ground beef, melted cheese, lettuce, tomato and mayo in a bun, are a favourite of mine and this is a slightly different take on them with a bruschetta theme. Bruschetta is a dish where bread is brushed with olive oil, grilled and rubbed with garlic before topping it with a fresh tomato mixture typically with garlic, onions, basil and a splash of balsamic vinegar. This recipe is a basic chopped cheese with the cheddar cheese being replaced with fresh mozzarella and the sliced tomatoes being replaced with a tomato bruschetta style mixture!
Bruschetta Chopped Cheese Sandwich
A variation on a chopped cheese sandwich with mozzarella and bruschetta tomatoes!
ingredients
- 1 tablespoon oil
- 1 cup onion, diced
- 1 1/2 pounds ground beef
- 1 tablespoon Montreal Steak seasoning (link) (or salt and pepper to taste)
- 1 tablespoon soy sauce (optional) (gluten-free for gluten-free)
- 1 tablespoon Worcestershire sauce (optional) (gluten-free for gluten-free)
- 1 (8 ounce) ball fresh mozzarella, sliced (or 4 slices mozzarella)
- 4 hoagies/buns/rolls, cut in half (optionally toasted) (gluten-free for gluten-free)
- 4 tablespoon mayonnaise
- 2 cups lettuce, shredded
- 1 cup tomatoes, seeded and diced
- 1/2 tablespoon extra virgin olive oil
- 1/2 tablespoon balsamic vinegar
- 1 clove garlic, minced/grated
- 1 tablespoon red onion, finely diced
- 1 tablespoon basil, thinly sliced
- salt and pepper to taste

- Heat the oil in a large skillet over medium-high heat, add the onions and cook until tender, about 5 minutes, before setting aside.
- Place the ground beef into the pan, press it down into the pan, sprinkle on the steak seasoning and let it cook until the bottom turns a deep golden brown, about 5-8 minutes.
- Flip the beef, press it into the pan, and cook until deep golden brown, about 5-8 minutes.
- Chop the beef to break it apart, add the onion, soy sauce, and Worcestershire sauce, and cook until the beef is cooked.
- Place the slices of cheese on top of the beef and let it melt before turning off the heat.
- Divide the chopped cheese beef between the hoagies, along with the mayo, lettuce, and tomato bruschetta, and enjoy!
- Mix everything.
