Roast beef and pot roast are some of my favourite comfort foods and this cajun inspired roast beef has been on my meal plan a lot lately! This roast beef is as easy as coating beef roast with cajun seasoning before browning it and throwing it into a slow cooker with some liquids to make the gravy! Beef broth forms the base of the gravy and it’s seasoned with worcestershire sauce and more cajun seasoning; when the beef is done cooking the liquids are transferred to a pan where cornstarch is added to thicken it up as it simmers. You can serve this cajun pot roast over mashed potatoes, rice, pasta, or in a bun, aka a po boy! I like to keep these po boys simple with buns, roast beef and gravy, mayo, lettuce, tomato, pickles and a hit of hot sauce! yum! These cajun roast beef po boys are great any time, especially for watching the game or celebrating Mardi Gras!
Cajun Roast Beef Po Boy
Moist and tender, cajun seasoned, roast beef in hoagies; pure comfort food!
ingredients
- 1 tablespoon oil
- 1 (2-3 pound) beef roast (such as chuck, eye of round, etc.)
- 1 tablespoon cajun seasoning
- 1 onion, sliced or diced
- 1 cup beef broth
- 1 tablespoon worcestershire sauce
- 1 tablespoon cajun seasoning
- 1 tablespoon cornstarch
- 1 tablespoon water
- 6 (12 inch) hoagies/buns
- 6 tablespoons mayonnaise
- 2 cups lettuce, shredded
- 2 large tomatoes, thinly sliced
- 1/2 cup pickles, sliced
directions
- Heat the oil in a large pan over medium-high heat, add the beef, seasoned with the cajun seasoning, and brown on all sides.
- Place the beef, onions, broth, worcestershire sauce, and cajun seasoning into a slow cooker, cover and cook on low for 8-10 hours or on high for 3-5 hours. (The beef will be falling apart tender when done!)
- Remove the beef and shred.
- Place the liquid from the slow cooker into a sauce pan, add the cornstarch mixed into the water, bring to a boil, reduce the heat and simmer until the gravy thickens, about 2-3 minutes, before mixing in with the beef.
- Mix the beef and gravy.
- Assemble the po boys and enjoy!
Option: Instead of transferring to a slow cooker in step 2, place everything in the pot that you cooked the beef in, bring to a boil, reduce the heat and simmer, covered, until the meat is pull apart tender, about 3-4 hours. OR Transfer the pot to a preheated 275F and braise until the meat is pull apart tender, about 3-4 hours.
Option: Add 1 tablespoon soy sauce to the slow cooker along with the worcestershire sauce.
Option: Add hot sauce to the po boy’s!
