Greek Salad

A Greek style salad with tomatoes, cucumber, onion, olives, feta and Greek dressing.

With spring here I have been thinking about salads more often and one of my favourites is a Greek style salad! A Greek salad is nice and simple containing tomatoes, cucumbers, kalamata olives, feta, onions, and a vibrant dressing. I really like the way the juiciness of the tomatoes and cucumers balance the saltiness of the olives and feta and the red onions provide a sweet and spicy counterpoint. The dressing for this salad is also pretty easy containing olive oil, lemon juice and oregano and the lemony vinaigrette really brightens the salad up.
Note: Traditionally Greek salads do not contain lettuce but it is always nice to add.

Prep Time: 10 minutes Total Time: 10 minutes Servings: 4

A Greek style salad with tomatoes, cucumber, onion, olives, feta and Greek dressing.

ingredients
  • 6 cups lettuce, sliced
  • 1 cup tomato, diced
  • 1 cup cucumber, diced
  • 1/4 cup red onion, sliced
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup feta, crumbled
  • 1/4 cup Greek salad dressing (see below)
directions
  1. Mix the salad and toss with the dressing.
Tip: Soak the red onions in vinegar for a few minutes to mellow them out.
Note: Traditional Greek salads do not include lettuce and the base is the tomato and the cucumber.

Greek Salad Dressing

Prep Time: 5 minutes Total Time: 5 minutes Servings: 16(1 cup)

A simple and fresh Greek dressing with olive oil, fresh lemon juice and oregano.

ingredients
  • 1/2 cup olive oil
  • 1/2 cup lemon juice (~2 lemons)
  • 1 teaspoon oregano
  • salt and pepper to taste
directions
  1. Mix everything vigorously until combined.
Option: Replace some or all of the lemon juice with red wine vinegar.
Option: Add some feta brine and cut back on the salt.

    I just got back from Greece, and indeed, the Greek salad had no lettuce. This was truly the best thing I ate in Greece. The freshness of the ingredients and the huge slab of feta was the difference. Additionally, there was very little dressing used. Divine.

    Kati: I usually use dried as I always have it on hand but if you have fresh, it would also be good!

    Thanks for acknowledging that traditional Greek salad does not contain greens. I love the beauty of the deconstructed salad plus it would be easy to avoid the cucumbers. (I like cucumbers but they don't like me.)

    Thank you for pointing out that the traditional Greek salad has no leafy greens Kevin:) It also never has lemon.
    That being said, your Greek-style salad sounds like a great alternative to the traditional version that's a staple in our home (being Greeks and all) 🙂
