Here is a super easy and tasty way to enjoy asparagus where it’s grilled and topped with tomatoes and a kalamata olive and feta dressing! The asparagus is grilled until it is just tender but still a little crispy and a little charred giving it a hint of smokiness which is just fabulous when combined with the juicy tomatoes and the tart and salty kalamata olive and feta dressing. The dressing is nice and hearty with large chunks of both kalamata olives and feta along with bits of tangy red onion and plenty of oregano. This asparagus dish is fabulous as a side or even as a light main straight off the grill and if you have any leftovers, slice the asparagus and it makes for a great salad for lunch the next day!
Grilled Asparagus and Tomatoes in a Kalamata Olive and Feta Vinaigrette
Charr grilled asparagus topped with juicy tomatoes in a salty and tart kalamata olive and feta dressing.
- 1 1/2 pounds asparagus, trimmed
- 1 tablespoon oil
- salt and pepper to taste
- 1 1/2 cups tomato, sliced
- 1/4 cup kalamata olive and feta dressing
- Toss the asparagus spears in the oil, salt and pepper and grill over medium-high heat until crisp-tender and slightly charred.
- Serve topped with the tomatoes and the kalamata olive and feta dressing and enjoy!
