Guacamole Omelette with Salsa

Over the last few months I have been experimenting with omelettes and in particular I have been focusing on open faced omelettes but lets not forget the classic folded omelette. It has been a while since I last made a folded omelet and as soon as I saw this recipe for a guacamole omelette with salsa on Kalyn’s Kitchen I knew that it was time to try making one again. I would not have though to use avocado let alone guacamole in an omelette but as soon as I had heard the idea I was intrigued. The folded over omelette is a bit trickier than an open faced omelette but as long as you don’t over stuff it and fold the one side over gently it is still pretty easy. It was hard not to over stuff this omelette but judicial snacking on the guacamole before it made it to the omelette helped out a lot and the guacamole omelette turned out great. Guacamole works so well stuffed in an omelette! The cool and creamy guacamole was surrounded by warm melted gooey cheese and light and fluffy eggs and overall it was amazing. The spicy salsa topping finish this breakfast off perfectly.

Guacamole Omelette with Salsa

Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 1
ingredients
  • 2 eggs
  • 1 pinch chili powder
  • salt and pepper to taste
  • 1/4 cup cheddar cheese (grated)
  • 1/4 cup guacamole
  • 1/4 cup salsa
directions
  1. Mix the chili powder, salt and pepper into the eggs.
  2. Heat a pan, pour the eggs in and let them cook until the just start to set.
  3. Sprinkle the cheese on and let it start to melt, about a minute.
  4. Spread the guacamole over half of the eggs and cook until the eggs have set, about a minute.
  5. Fold the the egg over the guacamole and slip onto a plate.
  6. Pour the salsa onto the omelette and enjoy.

    WOW! All the recipies on your blog I've looked through this far looks amazing, and I love that you explain exactly how o do, and making it sound easy. I'm sort of afraid of my kitchen, and I just moved from sweden to madeira, so I kinda have to cook for my self now. I've been eating pasta with tuna and ketchup for two weeks, but tomorrow I'll go out and buy ingridients for cheese and mushrooms quesadillas. Thank you for saving me from staving to death! 🙂

    i just saw guacamole and I have to come right over. I'm coo-coo for avocados made into anything. Fantastic with pairing it with an omelette.

    I often make omelettes for dinner, and this looks like a great one to satisfy me in the evenings. A good omelette is really an art form.

    What a beautiful photo. Hubby does not like avocado and I am not sure I will make this just for me, although I want to.

    I have to invite someone for lunch and make it for both of us. That will be extra motivation for what looks like a delicious recipe.

    When I lived in Boston, an ex-bf took me to this Mexican brunch place where they had all kinds of dishes that mixed avocado and guacamole with eggs. (It was amazing.) This looks delicious. Gotta love a closed omelet – classic.

    I discovered guacamole about a year ago and now I want to put it to everything I cook. This omelette looks so tasty and I bet it is delicious with the salsa sauce.
