It had been far too long since I had last had a good mushroom dish and I had been craving them. It seemed like the perfect opportunity to combine the mushrooms that I was craving with the new whole wheat crepe recipe that I wanted to try. I kept the mushroom mixture pretty simple using some of my favorite flavours. I decided to use shiitake and cremini mushrooms to form the base of the dish and I wanted something green so I added spinach. Thyme goes really well with mushrooms and it became the primary herb of the dish. I had some goat cheese left over and I thought that would be a great addition and I decided to go with a balsamic syrup garnish to round out the flavours. The mushroom and spinach crepes were a bit of work to put together as you have to juggle cooking the mushrooms, making the crepes and reducing the balsamic vinegar at the same time. In the end they turned out well! The mushrooms were of course great and the goat cheese added a really nice creaminess and the balsamic syrup cut through it nicely. Overall I really enjoyed both the meal and the whole wheat crepes.

This post of yours just appeared in my google reader and all else was immediately forgotten. You are truly the master of mushrooms. For that matter, you are a master of food. Impressive!
Delicious! And whole wheat in the crepes? Even better!
I love crepe, both the sweet and the savory…
There is one great creperie place in San Francisco called Ti-Couz, they serve all kinds of crepes. My favorite is buckwheat with mushroom and cheese. Yours off course. sounds delicious too!
I love crêpes. This looks chic. Very well done.
Great photo – love the colour on your crepes! It looks like a lot of drizzle though. Wasn’t it a bit tangy?
Grumbled goat cheese 😀
I like the idea of savory crepes – I just never know what to put in them… now I know.

Lovely crepes Kevin everything you cook looks so fancy. 🙂
Oh, these look lush! Goats chees, muchroom and balsamic, are a great trio.
This is such an appealing plate of food! Light and delicious!
Lovely looking crepes!
How absolutely gorgeous! Every time I see you using balsamic drizzle I feel a pang of guilt for not using mine enough… Love the combination of spinach, cheese and mushrooms.
Awesome dish! I have never made crepes, these look so yummy.
This would make a great quesadilla filling, too, with a slightly larger proportion of goat cheese.
Oh Kevin you have my full attention with this meal. Delicious…..
I’ve always been so scared to try crepes. I am a horrible pancake-maker so I figured I wouldn’t fair much better with something similar and maybe more complicated. 🙂
I do love them and yours look and sound absolutely awesome. Yum!
I love buckwheat crepes, they have a wonderful savory quality. These crepes look wonderful. As far as the balsamic, you can get the aged variety (10-25) and it will be already syrupy (but will cost you much more.) Sounds delicious, I want one for breakfast right now.
Oh boy. Mushrooms, spinach, and goat cheese are one of my favorite combinations. And crepes?? I could eat them for every single meal of every day!!! Soooo good.
Sues
Oh my god Kevin, that makes my mouth water! YUM
beautiful! balsamic, mushrooms and spinach is one of my favorite combinations 🙂
oh kevin, all the right ingredients in one perfect recipe… amazing!!! 🙂
Beautiful, and I’m sure yummy too!
This is a combination of some of my favorite things! I want to make crepes now.
This looks delicious! I’ve made a few, unique crepe recipes that I’m wild about, but only 1 of them (so far) has been savory. This recipe looks like it would make a nice addition to balance out that list.
I just wanted to tell you we made your curried honey Dijon chicken for dinner last night. It was fantastic! My husband loved it, and my 5 and 7-year-olds asked for seconds, and were mixing the sauce with their noodles. Thanks so much for a great recipe. I will definitely make it again.
The crepes look great! I am really into mushrooms lately so we will have to give this recipe a try.
beautiful presentation. i love the addition of goat cheese and balsamic.
I have everything at home to make these!! YAHOO! They look nutritious and delicious!
Looks great and that drizzle is perfect!

What a great savory crepe! Love that balsamic drizzle, and what a great idea to use mushrooms and cheese as your filler. YUM!
Tasty looking.
Wow. These look gorgeous and sound heavenly. When I’m making savory crepes—such as my chicken and mushroom crepes—I like to use a mix of buckwheat flour and all-purpose flour.
What a beautiful plate! I just got a port balsamic vinegar from O Olive Oil so maybe I’ll try it out with this recipe! Thanks!
wow! everything about this is perfect. love that balsamic drizzle.
I’ve been craving mushrooms lately – I’m pretty sure this would satisfy that craving!
My grill cheese dinner looks pretty bad to me now! They look amazing and I bet they even taste better!
Lucky you!
Wow Crepes.. Looks beautiful and really beautful colors.
Beautiful plating.
Absolutely astounding!
Yhese ar amazing Kevin ! And I love spinach !!! Gloria
this looks absolutely delicious kevin! i love crepes!
Looks great! The balsamic would cut through the richness of the cheese nicely. Too bad we don’t like goat’s cheese in this house, and husband is not keen on ricotta. Maybe I’ll try feta cheese.
These crepes look fantastic! Love the mushrooms!
These are wonderful. You’ve outdone yourself.
Sorry I haven’t stopped by in awhile…been kinda busy. Everything looks great though!!!
I want a plate of this right now! I would never have thought of putting together these ingredients in a crepe, but as soon as I saw it I knew it would be delicious!
made these last night. they were so GOOD! Thanks for the recipe 🙂
These were delicious! I didn't have spinach- left that out. I added some heavy cream to the mushroom mixture (at the very end…trying to give it more body since there wasn't spinach). They were absolutely divine and all my family members agreed!
AMAZING! i've never felt like such an accomplished chef!
this was delicious. the goat cheese really lifts the taste up to another level.
Man I so love food… so I hope to make this dish

Delicious. I used Whole Foods 365 oil-free Fig Balsamic for the reduced drizzle.
