Crepes

I had been putting off making crepes because I thought they were difficult to make. I decided to try making them and they turned out to be pretty easy. A small no-stick pan and a thin spatula that could get under the edge of the crepe to turn it over came in pretty handy. They are pretty good all by themselves when still warm from the pan though they are normally stuffed with goodies. I look forward to trying more recipes with crepes in the future.

Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 4

Light, paper thin crepes just waiting to be filled with something tasty.

ingredients
  • 1/2 cup flour
  • 1 egg
  • 3/4 cup milk
  • 1/8 teaspoon salt
  • 1 tablespoon butter, melted
directions
  1. Mix everything in a large bowl.
  2. Pour 1/4 cup of the mixture into a lightly buttered pan heated at medium.
  3. Tilt the pan and turn so that the mixture evenly coats the entire bottom of the pan.
  4. Cook the crepe until golden brown on the bottom, about 2 minutes.
  5. Flip and cook the other side until golden brown.

Mushroom and Spinach Crepes with Goat Cheese and Balsamic Drizzle
Kiwi and Nutella Crepes

    The bottom of the pan is about 7 inches across.

    I used to make crepes…then we moved here and I can buy them, ready-made… So I never have them warm, but they are really thin and pretty good.
    But you’re making me feel guilty…

    cinthya: I usually get about 4 crepes made in a small 7 inch pan.

    Just made these this morning, and it’s perfect for a special occasion breakfast for two. Delicious!

    And, as a general comment, I love that your recipes are often written on a smaller scale, quantity-wise, because all of the recipes I have from my mother and grandmothers are geared toward feeding a dozen people, and they don’t often scale down so well. Thanks!

    Nomnom. I was actually looking for a Lithuanian crepe recipe when I stumbled upon your's. I'm so glad to hear that it isn't hard to make!

    If you're ever in the mood for some savory crepes try it with some ham and cheese. Roll into a burrito, lightly pan fry and top with either sour cream or tomato sauce.

    It would be so helpful if the recipes indicated the serving size and number of portions to expect from the receipe given. Love this sight and all the simple, yummy recipes I have reviewed. I am looking forward to trying them all!

    Can't wait to try this out. I've tried making crepes a few times based on my mother's instructions. She has her own intuitive way of making them, and I couldn't ever seem to get precise measurements, so it never worked out that well and scared me away from crepes. But this looks doable! Thanks!
