This dish starts with a creamy avocado sauce with roasted tomatillos and a touch of spicy heat from a jalapeno chili pepper. Up next is the star of the show, some simple, finger licking good, taco lime grilled shrimp! The shrimp is marinated in a mixture of lime juice and a home made taco seasoning before being skewered up and grilled to perfection. Up next are some cherry tomatoes that are roasted until they are charred and tender but still burst in your mouth juicy! Everything is tossed with some light and healthy zucchini noodles, though this would also be amazing with regular spaghetti noodles! Light zucchini noodles tossed in a creamy avocado and tomatillo sauce with taco lime grilled shrimp and juicy roasted tomatoes!


ingredients
    For the taco lime grilled shrimp:
  • 1 pound shrimp
  • 2 tablespoons taco seasoning
  • 1/4 cup lime juice (~2 limes)
  • 1 tablespoon oil
  • For the creamy avocado zucchini noodle pasta with taco lime grilled shrimp:
  • 1 pound cherry/grape tomatoes
  • 3 medium zucchini, cut into noodles
  • 2 cups creamy avocado and tomatillo sauce (see below)
directions
    For the taco lime grilled shrimp:
  1. Marinate the shrimp in the mixture of the taco seasoning and lime juice and oil for 20 minutes.
  2. Skewer the shrimp and grill over medium-high heat until cooked, about 2-3 minutes per side.
  3. For the creamy avocado zucchini noodle pasta with taco lime grilled shrimp:
  4. Roast the tomatoes in a heavy bottomed skillet over medium-high heat, or broil under a broiler, until the tomatoes are charred and tender but still juicy, about 5-10 minutes.
  5. Lightly saute the zucchini noodles in a pan over medium heat until just tender, about 2-3 minutes.
  6. Toss the zucchini noodles, avocado sauce, roasted tomatoes and grilled shrimp and enjoy!

Option: Top with crumbled bacon!!!
Option: Top with crumbled queso fresco or feta!

A creamy avocado and roasted tomatillo sauce that is perfect for scooping with tortilla chips, tossed with pasta or used as a condiment!


ingredients
  • 2 medium tomatillos
  • 1 jalapeno pepper
  • 1 small onion, peeled and quartered
  • 2 large avocados
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro
  • salt to taste
directions
  1. Broil the tomatillo, jalapeno and onion until slightly charred and blackened on sides, about 5-10 minutes.
  2. Puree everything in a food processor and season with salt to taste.

Option: Add 1/4 cup sour cream to make it even creamier!

Half of my family doesn't like avocados, I wonder if I could get away with serving them this avocado sauce? I'd have to do chicken since my son is allergic to shrimp, but this looks so delicious!!!
