S'mores are a favourite summer treat consisting of a fire-roasted marshmallow and a layer of chocolate sandwiched between two pieces of graham cracker and I was thinking that a cookie version would be amazing! Summer vacation is over and and so fire side s'more making isn't happening as often so why not turn the flavours of s'mores into cookies? I started out with a basic chocolate chip cookie recipe, which already contains the milk chocolate component of the s'mores so I just needed to add the graham crackers, crumbled, along with mini marshmallows! These s'mores chocolate chip cookies could not be easier to make! You simply mix all of the ingredients and bake! It's that easy! You could be enjoying a freshly baked batch of these irresistible cookies in less than 30 minutes so they are perfect for after school treats!

Soft and chewy s'mores cookies just loaded with chocolate, graham cracker and marshmallows! Yum!


ingredients
  • 1/2 cup (1 stick) butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup graham crackers, coarsely crumbled
  • 1/2 cup chocolate chips (or chunks)
  • 1 cup mini marshmallows
directions
  1. Cream the butter and sugars in a bowl before beating in the egg and vanilla extract.
  2. Mix the flour, baking soda, baking powder and salt before mixing into the wet ingredients.
  3. Mix in the graham crackers, chocolate chips and marshmallows .
  4. Roll the dough into 1-2 tablespoon balls and place them on a parchment paper lined cookie sheet about 2 inches apart from each other.
  5. Bake in a preheated 350F/180C oven until just lightly golden brown around the edges, about 8-10 minutes.
