Loaded Chipotle Carnitas Nachos

Loaded Chipotle Carnitas Nachos
Last week I shared a recipe for chipotle slow cooker carnitas and now I am sharing what I used it in, these tasty loaded chipotle carnitas nachos! Nachos are so easy to make, especially when you have all of the ingredients made already so I like to make the meat, guacamole, salsa, etc. ahead of time and then I just need to throw everything together and bake until the cheese has melted! You can top these nachos with your favourite nacho toppings and I like to go with the chipotle salsa that the carnitas were cooked in along with onions and cheese before baking followed by fresh guacamole, pico de gallo and cilantro after baking. These loaded chipotle carnitas nachos are so nice and easy to make and they are perfect to snack on while watching the game or a family friendly meal!
