Last week I shared a recipe for chipotle slow cooker carnitas and now I am sharing what I used it in, these tasty loaded chipotle carnitas nachos! Nachos are so easy to make, especially when you have all of the ingredients made already so I like to make the meat, guacamole, salsa, etc. ahead of time and then I just need to throw everything together and bake until the cheese has melted! You can top these nachos with your favourite nacho toppings and I like to go with the chipotle salsa that the carnitas were cooked in along with onions and cheese before baking followed by fresh guac, pico de gallo and cilantro after baking. These loaded chipotle carnitas nachos are so nice and easy to make and they are perfect to snack on while watching the game or a family friendly meal!
Loaded Chipotle Carnitas Nachos
Tasty pork carnitas served nacho style on crispy tortilla chips smothered in melted cheese and topped with salsa, guacamole, and sour cream
ingredients
- 1 (12 ounce) bag tortilla chips
- 2 cups carnitas
- 1 cup chipotle salsa
- 1 small onion, sliced
- 2 cups cheese (such as cheddar and/or monterey jack), shredded
- 1/2 cup guacamole
- 1/2 cup pico de gallo
- 1/4 cup sour cream
- 2 tablespoons cilantro, chopped
directions
- Spread the tortilla chips out on a baking sheet in a single layer, top with the carnitas, salsa, onion and cheese and bake in a preheated 350F/180C oven until the cheese has melted, about 5 minutes before sprinkling on the remaining ingredients.
