I always enjoy a nice sandwich and sloppy joes are top on my list! These frito pie inspired sloppy joe’s are a simple beef and bean chili served in buns with shredded cheddar cheese and corn chips! To keep things easy I like to make the chili the day before and then I simply reheat it, slap it into some buns and they’re good to go in only a few minutes! I sometimes like to jazz these sandwiches up with pickled jalapenos or coleslaw and serve them with a side of potato salad or pasta salad!
Frito Pie Sloppy Joes
Chili sloppy joes with crunchy corn chips and cheddar cheese!
ingredients
- 1 pound ground beef
- 1 onion, diced
- 4 cloves garlic, chopped
- 1 tablespoon ancho chili powder
- 1 teaspoon chipotle chili powder
- 2 teaspoons ground cumin
- 1 tablespoon smoked paprika
- 1 (28 ounce) can diced tomatoes
- 2 (14.5 ounce) cans red kidney beans (or black beans or pinto beans)
- 2 teaspoons oregano
- 2 teaspoons worcestershire sauce
- salt and pepper to taste
- 8 buns
- 2 cups corn chips
- 1 cup cheddar cheese, shredded

- Cook the beef and onion in a large saucepan, breaking the beef apart with a spoon, until the beef is cooked through before draining any excess grease.
- Add the garlic, chili powders, cumin, and paprika and cook until fragrant, about a minute.
- Add the tomatoes, beans, oregano, worcestershire sauce, bring to a boil, reduce the heat and simmer for 10 minutes (to 2+ hours), covered, before seasoning with salt and pepper to taste.
- Spread the chili over the bottom of a 13×9 inch pan, sprinkle on the corn chips followed by the cheese and broil in a preheated oven until the cheese has melted, about 1-2 minutes.

Tip: Cook off any excess liquid in the chili if you want a slightly less sloppy, sloppy joe!
Option: Garnish with sour cream, jalapeno slices, green onions, coleslaw, blue cheese coleslaw etc.
