For busy days I like to keep some super quick and easy recipes on hand like this slow cooker Mongolian beef which is just packed with flavour. My regular stove top version of Mongolian beef is pretty quick and easy to begin with but the slow cooker makes it even easier! You pretty much just throw everything into the slow cooker in the morning and come home to a cooked main, just quickly cook some rice and a veggie to go with it and you are set! The base version this recipe is just the beef in a sauce but you can also throw in some vegetables like onions, carrots, peppers, etc to make more of the meal in one pot. This slow cooker mongolian beef is melt in your mouth tender, tasty and light; a perfect meal for busy days!
Throw some broccoli or green peppers in for the last 30 minutes and serve over rice for a complete meal!

Slow Cooker Mongolian Beef
Super quick and easy Mongolian beef in the slow cooker!
ingredients
- 1 pound steak (sirloin or flank), sliced thinly
- 3 tablespoons soy sauce (gluten-free or tamari for gluten-free)
- 1 tablespoon hoisin sauce (gluten-free for gluten-free)
- 1 tablespoon brown sugar
- 1 teaspoon chill sauce such as sambal oelek
- 1 clove garlic, grated
- 1 teaspoon ginger, grated
- 1 tablespoon cornstarch
- 1/3 cup water or beef broth
- 1 onion, thinly sliced (optional)
- 1 carrot, julienned (optional)
- 1 jalapeno, thinly sliced (optional)
- 1 teaspoon sesame oil
- 1/4 cup green onion, sliced
directions
- Place the beef, soy sauce, hoisin, brown sugar, chili sauce, garlic, ginger, cornstarch mixed in with water, onion, carrot and jalapeno in the slow cooker and cook on low for 6-10 hours or on high for 2-3 hours, before mixing in the sesame oil and green onions and enjoying!

Do you trim any fat from steak before putting in slow cooker? Do you de-seed the jalapeno? I am making this tomorrow and can’t wait.

Made this last night, tasty but not overwhelming. I would make again but use more ginger and the hot Thai chilies not the jalapeno (I did leave seeds in but didn’t give much flavour or heat). Going to try the wok recipe to see how different it will taste.

I’ve made this twice so far. My daughter liked it so much she asked for it for her birthday dinner. I have to mix everything together then split it between 2 crock pots. half my family eats fire, the other half doesn’t. I just have to remember red pot is hot, black pot is not. I paired it with my fried rice and everyone was happy.
