Taco Rice Bowl

All of your favourite taco flavours and toppings served in a bowl over a bed of rice instead of in tortillas!

Taco Tuesday is always a favourite and this is a slightly different take on it where instead of throwing everything into tortillas it’s served over a bed of rice! This recipe is as easy as making a tasty taco seasoned beef while the rice cooks and then serving the beef over the rice along with your favourite taco toppings! I like to serve these taco rice bowls with shredded lettuce, beans, diced tomatoes (or pico de gallo (link)), salsa (homemade salsa (link) or store bought), diced avocado (or guacamole (link)), sour cream, and shredded cheese! No matter how you serve them, these taco rice bowls are quick and easy to make and sure to please everyone!

Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Servings: 4

All of your favourite taco flavours and toppings served in a bowl over a bed of rice instead of in tortillas!

ingredients
    For the rice:
  • 1 cup rice
  • 2 cups water (or beef broth)
  • For the taco seasoned beef:
  • 1 pound ground beef
  • 1 small onion, diced
  • 3 cloves garlic, chopped
  • 2 tablespoons taco seasoning (link)
  • 1 tablespoon cornstarch
  • 1/2 cup (cool) water (or beef broth)
  • For the taco rice bowls:
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup pico de gallo (link)
  • 1 cup salsa (link)
  • 1/4 cup guacamole (link)
  • 1/4 cup sour cream
  • 1/2 cup cheddar cheese, shredded
directions
    For the rice:
  1. Place the rice and water in a medium saucepan, bring to a boil, reduce the heat and simmer, covered, for 18 minutes, before turning off the heat and letting it sit for 5 minutes.
  2. For the taco seasoned beef:
  3. Meanwhile, cook the beef and onion in a large skillet over medium-high heat, breaking it apart as it cooks, before draining off any excess grease.
  4. Add the garlic and taco seasoning and cook until fragrant, about a minute.
  5. Add the cornstarch mixed into the water, mix well, bring to a simmer and cook until most of the liquid has cooked off, about 3-5 minutes.
  6. For the taco rice bowls:
  7. Assemble the taco rice bowls and enjoy!
