Summer is all about salads and this Mediterranean chickpea salad is just p[asked with fresh summer flavours! Chickpeas serve as the base for this dish, combined with roasted red peppers, tomatoes, and fresh cucumbers.The dressing is made with olive oil and fresh lemon juice along with a hint of aleppo pepper and sumac. Of course it, it just would be right if there wasn’t plenty of fresh herbs including parsley and mint! This Mediterranean style chickpea salad is the perfect side for any summer meal and it travels well for picnics, cookouts, bbqs, potlucks, etc.
Mediterranean Chickpea Salad
A mediterranean style chickpea salad with plenty of fresh vegetables and herbs.
ingredients
- 2 (15 ounce) cans chickpeas, drained and rinsed
- 1 cup cucumber, sliced
- 1 cup grape tomatoes, sliced
- 2 roasted red peppers (link), sliced
- 1 small red onion, thinly sliced
- 2 tablespoons parsley, chopped
- 1 tablespoon mint, chopped
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- 1 teaspoon aleppo pepper (or red pepper flakes)
- 1 teaspoon sumac (or lemon zest)
- salt and pepper to taste
