This super simple salad is amazing, especially with summer field ripened tomatoes! Other than the veggies, this salad includes a fresh herb, usually parsley, lemon juice (or vinegar), olive oil, salt and pepper. This salad mkes for a great side for pretty much any meal!
Mediterranean Salad
A quick and easy Mediterranean style salad with finely diced cucumber, tomatoes and onion.
ingredients
- 2 cups cucumber, finely diced
- 2 cups tomato, finely diced
- 1/4 cup red onion, finely diced
- 1 tablespoon parsley, chopped (or cilantro, or mint, or basil)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice (or red wine vinegar)
- salt and pepper to taste
