Grilled Chicken al Pastor

Grilled chicken in an al pastor style pineapple and chili sauce served in tacos with juicy pineapple, fresh onions and cilantro along with a hit of lime!

Al pastor is a Mexican pork that is marinated in chilies and pineapple, layered and roasted on a vertical rotisserie similar to shawarma and this recipe takes those flavours and uses them on grilled chicken! You basically take chicken and marinate it in a mixture of pureed chilies and pineapple before grilling it! I like to slice a pineapple and grill it at the same time! Once the chicken is cooked, it’s chopped, along with the pineapple, before being thrown into tortillas to enjoy as tacos! You could also enjoy the grilled chicken and pineapple with a knife and fork, or throw them into a sandwich, or chop them up and throw them into burritos, quesadillas, a salad, etc.

Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes Servings: 4

Grilled chicken in an al pastor style pineapple and chili sauce served in tacos with juicy pineapple, fresh onions and cilantro along with a hit of lime!

ingredients
    For the chicken:
  • 2 tablespoons guajillo chili powder
  • 1 tablespoon chipotle chili powder
  • 1 tablespoon achiote/annatto paste (optional)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1/4 cup pineapple juice
  • 1 onion, grated
  • 2 cloves garlic, grated/minced
  • 1 tablespoon lime juice (or apple cider vinegar)
  • 2 tablespoons oil
  • 1 pound boneless and skinless chicken breasts or chicken thighs
  • For the tacos:
  • 1 pineapple, sliced
  • 12 small (3-4 inch) corn tortillas, warmed/toasted
  • 1/2 cup onion, diced
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons cotija (or queso fresco of feta), crumbled
  • 1 lime, sliced
directions
    For the chicken:
  1. Mix all of the ingredients other than the chicken and marinate the chicken in HALF of the mixture for 20 minutes, reserving the other half for later.
  2. Shake off the excess marinade and grill until cooked through (165F).
  3. Optionally grill the pineapple slices!
  4. For the tacos:
  5. Chop the chicken and pineapple and mix with the other half of the marinade that was not used on the chicken.
  6. Divide the chicken between the tortillas along with the onion, cilantro, and cheese.
Note: If you use fresh pineapple/juice in the marinade it will start to break down the meat so you should only marinate it for a short period of time, not overnight. (Canned pineapple is fine for overnight marination.)
Option: Make the tacos with your favourite taco toppings!
Option: Skip chopping the chicken, just throw it into a sandwich with the pineapple slices!
