Chimichurri, an Argentinian green sauce made with parsley, garlic, olive oil, oregano and red wine vinegar, is one of my favourite summer ingredients, especially with grilled meats! I recently made a batch of chimichurri and in addition to using it on grilled meat I also mixed some into a mashed avocado to serve on top of the grilled meat! Chimichurri is amazing all by itself and it only gets better when you combine it with cool and creamy avocado and they make the perfect topping, side or spread for grilled meats!
Avocado Chimichurri
A creamy avocado sauce with fresh parsley chimichurri mixed in!
ingredients
- 1 cup parsley, coarsely chopped
- 2 tablespoon s fresh oregano (or 1/2 teaspoon dried oregano)
- 4 cloves garlic, coarsely chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon red pepper flakes
- salt and pepper to taste
- 1 avocado, mashed

- Puree everything in a in a food processor.
- Mix the chimichurri and mashed avocado and enjoY!

Option: Replace the red pepper flakes with a fresh red chili pepper (to taste).
Option: Replace the red wine vinegar with fresh lime and/or lemon juice!
