Asparagus season is here and it’s one of my favourite times of the year! I kicked things off with a simple frittata that’s packed with flavour: asparagus, goat cheese and bacon! A frittata is an egg-based Italian dish similar to an omelette or crustless quiche that can be filled with tasty ingredients! I like to use an egg and cottage cheese for the base and all you really need to do is mix them, along with the other ingredients, pour into a pan and bake! This asparagus, bacon and goat cheese frittata is an amazing spring breakfast/brunch that is so easy to make!
Bacon and Goat Cheese Asparagus Frittata
A quick and easy baked egg casserole, or crustless quiche, with bacon, goat cheese, and asparagus!
ingredients
- 4 strips bacon, cut into 1/2 inch pieces
- 8 large eggs
- 1 cup cottage cheese
- 4 ounces goat cheese (chevre), crumbled
- 8 ounces asparagus, trimmed and cut into bite sized pieces
- 2 green onions, sliced
- salt and pepper to taste
directions
- Cook the bacon and set aside to cool.
- Mix the eggs, bacon, cottage cheese, goat cheese, green onions, salt and pepper and pour into a 8-10 inch oven safe pan.
- Bake in a preheated 375F/190C oven, about 25-30 minutes.
