In the summer I always enjoy a tasty burger and these chicken parmesan inspired burgers have been on my menu a lot lately. The basic idea here is chicken patties topped with melted cheese in buns with marinara sauce. The patties are made with ground chicken, shredded zucchini, onion, garlic, parmesan cheese, and oreganos. (I like to add zucchini to chicken burgers to help keep them nice and moist, but it’s completely optional!) You could make these burgers with simple buns but I like to kick things up a bit by slathering them with garlic butter and toasting/grilling them until lightly golden brown! Once the patties have been grilled they are topped with the cheese and cooked a bit longer to melt, before being thrown into the garlic bread buns along with the marinara sauce! These chicken parmesan burgers may be a bit messy but they are the perfect burgers for your summer meals!
Chicken Parmesan Burgers

ingredients
- 1 pound ground chicken (or beef or turkey)
- 1 cup zucchini, grated and squeezed to remove excess liquid (optional)
- 1/4 cup onion, grated
- 2 cloves garlic, chopped
- 1/4 cup breadcrumbs
- 1/4 cup parmigiano reggiano (parmesan), grated
- 1 teaspoon oregano (or Italian seasoning)
- salt and pepper to taste
- 1 cup mozzarella, shredded
- 2 tablespoons parmesan, shaved or grated
- 1/4 cup butter, room temperature
- 1 clove garlic, grated/minced (or 1/2 teaspoon garlic powder)
- 1 teaspoon parsley, chopped
- 4 buns/rolls (gluten-free for gluten-free)
- 1 cup marinara sauce (link)
- 2 tablespoons basil, thinly sliced
directions
- Mix the chicken, zucchini, onion, garlic, breadcrumbs, parmesan,oregano, salt and pepper, and form 4 patties.
- Cook the patties by grilling, or pan frying, or broiling, until cooked through, about 3-5 minutes per side.
- Sprinkle the mozzarella and parmesan on top and let it melt before removing the patties from the grill.
- Mix the butter, garlic, and parsley and spread it over the inside of the buns before lightly grilling or toasting them until the butter has melted and the buns are lightly toasted.
- Assemble the burgers by placing the marinara sauce on the bottom (inside) of the bun, topped with the patties, the fresh basil and the tops of the buns.
