A grinder sandwich is a roll filled with Italian style deli meats, provolone, lettuce, tomatoes, pepperoncini, with a simple mayonnaise based dressing and it turns out that all of the ingredients from the sandwich work amazingly well as a salad! This is a super simple chopped or tossed style salad where everything is combined and tossed with the dressing. You can use your favourite salad ingredients and Italian style deli meats and I like to keep it simple with salami and pepperoni.
Grinder Salad
All of the flavours of a grinder in salad form!
ingredients
- 1/3 cup mayonnaise
- 1 tablespoon red wine vinegar
- 1 teaspoon oregano (or Italian seasoning)
- 1 small clove garlic, minced/grated
- 2 tablespoons parmigiano reggiano (parmesan), grated
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 6 cup lettuce, chopped
- 1 cup tomato, diced
- 1/4 cup red onion, sliced
- 1/4 cup pepperoncini, sliced
- 1/2 cup provolone, chopped
- 1/2 cup salami, chopped
- 1/2 cup pepperoni, chopped
