Coleslaw, a shredded cabbage based salad, is a staple side dish and it’s always fun to change the flavours up a little, like in this one which is inspired by Mexican style street corn. Other than the shredded cabbage the main ingredients of this slaw is fresh corn and cotija cheese along with jalapeno, green onions and cilantro. A popular coleslaw dressing is mayonnaise based and it works well here since Mexican street corn is slathered in mayo! The dressing is finished with some tangy lime juice along with a pinch of red chili powder, which is often sprinkled on the Mexican street corn! This coleslaw is easy to make and the combination of the creamy and tangy dressing on the crunchy cabbage, sweet corn, and salty cheese is amazing!
Mexican Street Corn Coleslaw
An easy to make coleslaw with all of the flavours of Mexican street corn!
ingredients
- 8 cups green cabbage, shredded or finely chopped
- 2 cups corn (fresh or thawed)
- 1 jalapeno, seeded and finely diced (optional)
- 1/4 cup green onion, sliced (optional)
- 1/4 cup cilantro, chopped
- 1/4 cup cotija (or feta), crumbled
- 3/4 cup mayonnaise
- 2 tablespoons lime juice
- 2 teaspoons sugar (optional)
- 1/4 teaspoon chili powder (or cayenne) (or to taste)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
directions
- Mix the cabbage, corn, jalapeno, green onion, cilantro, and cheese.
- Mix the mayonnaise, lime juice, sugar, chili powder, salt and pepper.
- Mix the coleslaw and dressing and either enjoy immediately or, better yet, let it sit in the fridge for an hour to overnight to let the flavours mingle!
Option: Replace some of the mayo with sour cream or plain yogurt.
Option: Add 2 tablespoons of parmesan!

I don’t see where the cheese (cotija or feta) is in the instructions. Is it best to include it in the dressing or with the salad ingredients? Thank you.
