Sloppy Joe Mac n Cheese

Sloppy joes just got even better by mixing in macaroni and plenty of cheese!

This recipe combines two of my childhood favourites; Sloppy Joe’s and Mac n Cheese into one, and it is even better! The basis for this recipe is a beef and bean sloppy joe mixture that has extra broth added along with the macaroni pasta and the macaroni is cooked right in the sloppy joes pan. While the pasta is cooking, a super easy cheese sauce is made with real cheddar cheese and when it’s ready it’s mixed into the sloppy joes. The combination of the tasty beefy sloppy joes with the cream and super cheesy mac n cheese is simply divine! Pure comfort food for any occasion!

Sloppy joes just got even better by mixing in macaroni and plenty of cheese!

ingredients
    For the sloppy joe macaroni:
  • 6 strips bacon, cut into 1/2 inch pieces
  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, chopped
  • 1 teaspoon paprika
  • 1 tablespoon tomato paste
  • 3 cups beef broth (or water)
  • 2 cups macaroni (~8 ounces)
  • 1 (14.5 ounce) can kidney beans, rinsed and drained (optional)
  • 1/4 cup ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cider vinegar
  • 1 tablespoon sriracha*
  • salt and pepper to taste
  • For the cheese sauce:
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk (or broth)
  • 4 ounces cream cheese , softened
  • 2 cup cheddar cheese, shredded
directions
    For the sloppy joe macaroni:
  1. Cook the bacon in a large pan, set aside and drain off most of the grease.
  2. Add the beef and onions and cook until the beef is cooked though, breaking it up as it cooks with a spoon, before draining off any excess grease.
  3. Add the garlic, paprika, and tomato paste and cook until fragrant, about a minute.
  4. Add the broth and macaroni, bring to a boil, reduce the heat and simmer until the pasta is cooked, about 8 minutes.
  5. Meanwhile make the cheese sauce.
  6. Mix the cheese sauce, beans, ketchup, mustard, Worcestershire sauce, sugar, vinegar, and sriracha and season with salt and pepper to taste.
  7. For the cheese sauce:
  8. Melt the butter in a sauce pan over medium heat.
  9. Sprinkle in the flour and cook until bubbling and lightly golden brown, about a minute.
  10. Add the milk, mix well and bring to a simmer and cook until it thickens a bit, about 2-3 minutes.
  11. Reduce the heat to medium-low, add the cheese and cook until it melts into a smooth sauce.
Option: Sprinkle 1 cup of shredded cheddar cheese over the top and broil in the oven until the cheese has melted!

    This was a simple and delicious recipe. Didn’t make any adjustments. It’s a nice variation on traditional mac and cheese.

    Can Sloppy Joe Mac n Cheese be cooked in a crock pot?

      You can.* Optionally implement steps 1-3 on the stove top or just throw the ingredients from those steps into the crock pot along with the broth and cook on LOW for 6+ hours. Break up the beef if required, add the macaroni and cook on high until tender, about 15 minutes. Mix in the ingredients from step 6 and enjoy. *Note: Either make the cheese sauce on the stove top as directed OR just mix the cream cheese and cheddar cheese into the sloppy joes along with the other ingredients from step 6.
