Potato gratin is a classic side dish that I always enjoy and it’s also nice with sweet potatoes! Sweet potatoes pair surprisingly well with a savoury cheese sauce! The recipe is pretty much the same as a regular potato gratin starting with a cheese sauce which is the simple combination of butter, flour, milk and cheese! The sauce is seasoned with garlic, thyme, and paprika and I like to use a white cheddar as the cheese. The sauce and thinly sliced sweet potatoes are layered in a pan, topped with more cheese and baked until tender. You can change the flavors up by using different cheese and seasonings; I like to use cheddar, chipotle chilies in adobo, and bacon! No matter how you make it, sweet potato gratin is an amazing side dish for any meal!
Sweet Potato Gratin
A potato gratin with sweet potatoes and plenty of savoury melted cheese!
ingredients
- 3 tablespoons butter
- 1 onion, finely diced
- 1 clove garlic, chopped
- 1 teaspoon thyme, chopped (or 1/2 teaspoon dried thyme)
- 1 teaspoon sage, chopped (or 1/2 teaspoon dried sage)
- 1 teaspoon smoked paprika
- 3 tablespoons flour (gluten-free for gluten-free)
- 2 cups milk
- 1/2 cup sour cream
- 1 pinch nutmeg (optional)
- 1 cup cheddar cheese, shredded
- salt and pepper to taste
- 4 pounds sweet potatoes, thinly sliced
- 1 cup cheddar cheese, shredded
directions
- Melt the butter in a large saucepan over medium heat, add the onion and cook until tender, about 5-7 minutes.
- Add the garlic, thyme, sage, paprika, and flour, mix and cook until fragrant, about a minute.
- Add the milk, sour cream, and nutmeg, bring to a simmer and cook until the sauce thickens, about 2-3 minutes.
- Add the cheese and cook until it melts, about a minute, before removing from heat and seasoning with salt and pepper to taste.
- Spread a few tablespoons of the sauce over the bottom of a 9×13 inch baking pan, layer the sweet potatoes in the pan alternating with sauce until all of the potatoes and sauce are in the pan.
- Sprinkle on the cheese and bake in a preheated 350F/180C oven until the potatoes are tender, about 45-60 minutes, before letting it rest for 20 minutes and enjoying!
Option: Add 4 ounces cream cheese to the cheese sauce.
Option: Add chopped chipotle chili peppers in adobo!
Option: Add 1 pinch of cinnamon!
Option: Add or garnish with 4 strips bacon, cooked and crumbled.
