It's time for a new jalapeno recipe! Yes, jalapenos are one of my favourite foods! I'm constantly trying new recipes that feature them with the latest one being a tasty honey and lime jalapeno chicken! This jalapeno chicken is a Chinese style dish that is so quick and easy to make; it's on the table in less than 20 minutes! You start by quickly cooking the chicken and jalapenos before adding the sauce ingredients to the pan to finish it off. The sauce consists on the magical combination of honey for sweetness, lime for sourness/tartness and soy sauce for saltiness which when combined with the spicy jalapenos forms the perfect harmony flavours that dance in your mouth! You can add some veggies to the sauce like green peppers or broccoli to serve over rice or pasta to complete the meal or you can simply steam the veggies and serve them on the side. This honey and lime jalapeno chicken is my new favourite quick and easy weeknight meal that always disappears off the table so quickly!

Quick and easy sauteed chicken in a tasty honey and lime jalapeno sauce!


ingredients
  • 1 tablespoon oil
  • 1 pound chicken, boneless and skinless, diced
  • 2 jalapenos, sliced or diced
  • 1/2 cup chicken broth
  • 3 tablespoons honey
  • 3 tablespoons lime juice
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 clove garlic, grated
  • 1 teaspoon ginger, grated
  • 1 tablespoon water
  • 1 tablespoon cornstarch
  • 2 teaspoons sesame oil
  • 2 tablespoons cilantro, chopped
  • 1/4 cup green onion, sliced
  • 1 teaspoon toasted sesame seeds
directions
  1. Heat the oil in a pan over medium-high heat, add the chicken and cook until cooked through, about 2-4 minutes per side, before adding the jalapeno and cooking for another minute..
  2. Add the mixture of the broth, honey, lime juice, soy sauce, garlic, ginger and the mixture of the water and the corn starch, toss to coat and cook until the sauce thickens, about a minute.
  3. Mix in the sesame oil and cilantro, remove from heat and serve garnished with sliced green onions and sesame seeds.

Note: Use as many jalapenos as you desire to get the level of heat that you want. for lower heat, remove the seeds from the jalapenos.
