Today I have a quick, easy and super tasty meal for you, a jalapeno popper skillet chicken aka cheesy jalapeno chicken! This chicken dinner is so easy to make! You simply cook the chicken in a skillet and then make a cheesy jalapeno sauce with cream cheese, cheddar cheese and, of course, jalapenos! These flavours are very similar to jalapeno poppers, or jalapenos stuffed with cream cheese and cheddar cheese so I like to call this a jalapeno popper skillet chicken. Since I sometimes like to wrap my cheese stuffed jalapeno poppers with bacon, it makes a perfect addition to this dish! This recipe comes together in about as much time as it takes to cook some rice and steam some veggies which complete the meal and make it perfect for busy work days!

Jalapeno Popper Skillet Chicken
Chicken in a cheesy jalapeno sauce! All of the flavours of jalapeno poppers in a skillet chicken dinner!
ingredients
- 1 tablespoon oil
- 1 pound chicken, boneless and skinless, diced
- salt and pepper to taste
- 1 small onion, diced
- 2 jalapenos, sliced or diced
- 2 cloves garlic, chopped
- 1 cup chicken broth
- 4 ounces cream cheese, softened
- 1 cup cheddar cheese, shredded
directions
- Heat the oil in a pan over medium-high heat, add the chicken (seasoned with salt and pepper) and cook until lightly golden brown.
- Add the onions and jalapenos and cook until tender, about a minute before adding the garlic and cooking another minute.
- Add the chicken broth and deglaze the skillet by scraping the brown bits up off of the bottom of the pan as the broth sizzles.
- Add the cheese and cook until it has melted and the sauce is nice and smooth

I made this tonight and it was super yummy! I added mushrooms to the dish and was able to omit the chicken broth due to the liquid released from the mushrooms. I served with a side of mashed potatoes, but think this would have been amazing with some fettuccine. Will definitely make again!
