Sun Dried Tomato Chicken Salad

A quick and easy chicken salad with sun-dried tomatoes and spinach! (aka Tuscan Chicken Salad, aka Marry Me Chicken Salad).

Tuscan style dishes usually contain sun-dried tomatoes and spinach in a creamy parmesan sauce which is a tasty combination of flavours that also works well in a chicken salad! Chicken salad is a dish that contains sliced or shredded chicken in a mayonnaise based dressing along with things such as diced celery, onions, etc. The creamy aspect is provided by the mayonnaise, and sliced sun-dried tomatoes and coarsely chopped spinach are added to finish the tuscan style flavours. I like to lighten up the dressing by replacing half of the mayonnaise with greek yogurt (or cottage cheese) and fresh basil and lemon juice brighten it up and make it more summery! I like to throw the sun-dried tomato chicken salad into sandwiches and wraps!

A quick and easy chicken salad with sun-dried tomatoes and spinach! (aka Tuscan Chicken Salad, aka Marry Me Chicken Salad).

ingredients
  • 4 cups chicken, cooked and shredded or sliced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup celery, thinly sliced
  • 1/4 cup red onion, diced
  • 2 tablespoons basil, thinly sliced
  • 2 cups baby spinach, chopped
  • 1/3 cup plain greek yogurt
  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon oregano (or italian seasoning (link))
  • 1 clove garlic, minced/grated
directions
  1. Mix the chicken, sun dried tomatoes, celery, onion, basil and spinach with the mixture of the yogurt, mayo, lemon juice, oregano, salt and pepper and enjoy!
Note: Use your favourite kind of cooked chicken! A rotisserie chicken works well! I usually poach 2 pounds of chicken breasts in water before letting them cool and slicing or shredding.
Option: Change the flavours up as desired!
Option: Add 1/4 cup parmigiano reggiano (parmesan cheese), grated.
Option: Add 1/2 cup artichoke hearts, coarsely chopped.
Option: Use any combination of yogurt, mayo, sour cream, cottage cheese, ricotta, etc.
Option: Enjoy on toast, in a sandwich, in a wrap, etc, or as a side, or as a dip, etc.
