Slow Cooker White Chili Chicken Burrito Bowls

All of the flavours of white chili chicken, made in a slow cooker, in a tasty burrito bowl.

White chili chicken is a chili made with chicken, green chilies and cream, it’s one of my favourites, and you can’t go wrong making it in a slow cooker before throwing it into a burrito bowl! This recipe takes all of the flavours of white chicken chili and places it in a rice bowl that’s just packed with flavour! The chicken is cooked in a slow cooker along with salsa verde, green chilies, onions, garlic, cumin and when it’s done cream cheese is mixed in. The bowl is then constructed, as you like, with ingredients such as: cooked rice, lettuce, beans, corn, avocado, cheese, sour cream, jalapenos, cilantro, etc. You could of course use the slow cooker white chili chicken in an actual burrito, or in tacos, quesadillas, etc.

Slow Cooker White Chili Chicken Burrito Bowls

Prep Time: 10 minutes Cook Time: 8 hours Total Time: 8 hours 10 minutes Servings: 8

All of the flavours of white chili chicken, made in a slow cooker, in a tasty burrito bowl.

ingredients
    For the slow cooker white chili chicken:
  • 2 pounds boneless and skinless chicken breasts or thighs
  • 1 onion, diced
  • 1 poblano pepper, diced (optional)
  • 1 jalapeno pepper, diced (optional)
  • 3 cloves garlic, chopped
  • 1 teaspoon ground cumin
  • 1 cup salsa verde (link)
  • 1/2 cup chicken broth (link) (or water)
  • 4 ounces cream cheese (or sour cream)
  • For the burrito bowl:
  • 2 cups cooked rice
  • 2 cups lettuce, shredded
  • 1 (15 ounce) can white beans, drained and rinsed
  • 1 cup corn
  • 2 green onions, sliced
  • 2 tablespoon cilantro, chopped
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/2 cup cheese (such as cheddar or jack)
  • 1 jalapeno pepper, slices (or pickled)
directions
    For the slow cooker white chili chicken:
  1. Place the chicken, onion, poblano, jalapeno, garlic, cumin, salsa verde, and broth in a slow cooker, and cook on low for 8 hours or on high for 2-3 hours.
  2. Remove the chicken and shred or pull.
  3. Place the cream cheese into the sauce in the slow cooker, mix, and let it melt into the sauce.
  4. Mix the chicken back into the sauce and enjoy!
  5. For the burrito bowl:
  6. Assemble the burrito bowls and enjoy!
Note: You can control the heat with the salsa verde, poblano and jalapeno. If you like it milk, just use the salsa verde, if you like it spicy, use them all or even use more!
Option: Replace the poblano and jalapeno with a 4 ounce can of diced green chilies.
Option: Make burritos, tacos, quesadillas, etc. with the slow cooker white chili chicken!
Option: Use your favourite burrito fillings/topping in the bowl!
