Burritos are an excellent Mexican style meal and it can be fun to throw all of the ingredients into a bowl without the tortilla! These chicken fajita burrito bowls are tasty and liter way to enjoy chicken fajita burritos! The bowls start out with a bed of rice, topped with shredded lettuce, pico de gallo, guacamole, shredded cheese, and a tasty dressing. When I make chicken fajitas I like to make a double batch to make these burrito bowls for a quick meal the next day!
Chicken Fajita Burrito Bowls
A lite burrito in bowl form with chicken fajitas, sauteed peppers and onions, pico, guac, and cheese in a cilantro lime sauce!
ingredients
- 1 pound chicken fajitas, warm
- 2 cups cooked rice
- 4 cups lettuce, sliced
- 1 cup pico de gallo (or tomatoes, diced)
- 1 cup guacamole (or 1 avocado, diced)
- 1/4 cup cheddar cheese, shredded
- 1/2 cup cilantro lime dressing
directions
- Assemble the salad, toss with dressing and enjoy!
Option: Add 1 cup black beans.
Option: Add salsa or replace the pico de gallo with salsa.
Option: Use creamy avocado dressing, or creamy avocado salsa verde dressing, or cilantro lime ranch dressing, or jalapeno ranch dressing.
Option: Use queso fresco, or feta instead of the cheddar cheese.
Option: Add 1/4 cup sour cream.

I love all of these ingredients and don’t always want the tortillas or at least I shouldn’t always eat them so this works for me when I’m counting bread carbs, thank you
