Spinach and artichoke dip is one of my favourite foods and I typically like to make a hot melted cheese spinach and artichoke dip which is so good with all of that ooey gooey melted cheese! Another great version is this avocado spinach and artichoke dip where the base of the dip is a mashed avocado rather than all of that cheese. The avocado makes the dip so nice and smooth and creamy while keeping things lighter. I like to use a fresh baby spinach rather than frozen to keep it nice and fresh (but frozen spinach also works well) and a hit of lemon makes it even better! This dip is pretty simple and it takes almost no time to make so it's great for last minute snacks and even light meals when combined with crackers or toast! The dip is simply amazing with just the base ingredients but you can also add extra flavours to change things up with some good ones being: parmesan cheese, bacon, sun dried tomatoes, chili sauce, etc. No matter how you make it this avocado spinach and artichoke dip is sure to satisfy!

A cool and creamy avocado spinach and artichoke dip!


ingredients
  • 2 large avocado, mashed
  • 5 ounces fresh baby spinach, coarsely chopped
  • 1 (14 ounce) can artichoke hearts, drained and coarsely chopped
  • 1 clove garlic, grated
  • 1 lemon, juice and zest
  • salt to taste
directions
  1. Mix everything and enjoy!

Option: Puree everything in a food processor.
Option: Add sriracha, chopped jalapenos or your favourite hot sauce for a bit of heat!
Option: Add 1/4 cup cooked and crumbled bacon!
Option: Add 1/4 cup sliced sun dried tomatoes.
Option: Add 1/4 cup grated parmigiano reggiano (parmesan).
Option: Add 1/4 cup mayonnaise.
