I made this two weeks ago for a weekend BBQ and it was a great hit! Everybody commented on it and requested that I bring it to the next one too! It's such a fresh, summery, flavorful salad, and so colorful. I like it with the red wine vinegar. It's also pretty when you use the fresh spinach tortellini, it adds a nice green color to it. It's yummy! Thx Kevin!
Kathy InCali: I'm glad you enjoyed it! The spinach tortellini would be great!
This was a very fast and tasty salad. I followed the recipe exactly. This was a hit at the BBQ.
This was the best Mediterranean salad I have ever made. Just gave the recipe to 5 of my friends. Thank you Kevin for such an easy, healthy and tasty salad
