It time for some more outdoor grilling fun with these bacon wrapped guacamole stuffed burgers! Bacon and avocados are two of my favourite foods and when you combine them in the form of burgers and grill them up until crispy, smoky, charred, juicy and oh so good, they are nearly irresistible! These burgers could not be easier to make! You just season the meat as desired, form it into thin patties, top with guacamole followed by another patty and the patties are pinched closed on the sides to contain the guacamole and prevent it from bursting out. Everything is then wrapped in bacon, both to help restrain the guacamole and to help keep the burgers nice and juicy when grilled... who am I kidding? The bacon is simply there because it's, well it's bacon!! I like to serve these bacon wrapped guacamole stuffed burgers in a toasted bun with melted cheese and some fresh homemade pico de gallo!

Bacon Wrapped Guacamole Stuffed Burgers

Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes Servings: 4

Grilled burgers wrapped in crispy bacon and stuffed with cool and creamy guacamole!


ingredients
  • 1 1/4 pounds ground beef
  • salt and papper to taste
  • 1/2 cup guacamole
  • 8 strips bacon
  • 4 buns
  • 4 slices cheese
  • 1/2 cup pico de gallo
directions
  1. Mix the ground beef salt and pepper, form into 8 1/4 inch thick patties, top half of the patties with 2 tablespoons guacamole, place the remaining halves on top, pinching the sides shut and wrap each burger with 2 strips bacon.
  2. Grill the patties over medium-high heat until the bacon is crispy and the burgers are cooked to the desired level of doneness, about 3-5 minutes per side.
  3. Optionally grill the buns and melt the cheese onto the patties or buns.
  4. Assemble the burgers with platy of pico de gallo and enjoy!

Option: Instead of seasoning the beef with salt and pepper, season it with your favourite spice blend such as Montreal steak spice or taco seasoning.

Wowww! These look insanely delicious! I have put guac on top of burgers (http://www.pancakesandbiscotti.com/2015/07/my-favorite-burger.html) but had never considered using it as a burger filling. Love the addition of the bacon around the burger too. Bravo!
