Eggplant Pizzas

Mini pizzas made on eggplant slices that are tasty, easy to make and kid friendly!

After making the cauliflower pizza crust and the zucchini pizza crust the next vegetable up was eggplant! Instead of following in the footsteps of his predecessors I wanted to go another route with the eggplant pizzas keeping things nice ans simple and just using eggplant slices as the crust of the pizzas. These eggplant pizzas are really easy to make, you simply slice the eggplant and roast or grill the slices until the eggplant just starts to turn tender, top it with your favourite pizza toppings and then bake them until the cheese gets all melty and good! In addition to being easy to make they are super tasty and if you are an eggplant lover like me then they are even better than the original, healthier and kid friendly to boot! These eggplant pizzas are bound to become a staple on my meal plan!

With all of the fresh tomatoes around I could not help making my own pizza sauce with them but feel free to use store bought to save some time.

Prep Time: 5 minutes Sit Time: 20 minutes Cook Time: 25 minutes Total Time: 50 minutes Servings: 4

Mini pizzas made on eggplant slices that are tasty, easy to make and kid friendly!

ingredients
  • 1 large eggplant, cut into 1/4 inch slices
  • 1 tablespoon coarse salt
  • 1 tablespoon oil
  • 1 teaspoon italian seasoning or oregano
  • salt and pepper to taste
  • 1 cup pizza sauce
  • 1 cup mozzarella, shredded
  • 1 ounce pepperoni
directions
  1. Sprinkle the eggplant with the coarse salt, let sit on paper towels for 20 minutes and wipe dry.
  2. Brush the eggplant slices with oil and season with italian seasoning, salt and pepper.
  3. Roast the eggplant in a preheated 400F/200C oven until it just starts to turn tender, about 15-20 minutes. (Do not let them become too soft or mushy.)
  4. Top the eggplant with sauce, cheese and pepperoni and broil until the cheese has melted, about 3-5 minutes.
Option: Grill the eggplant instead of baking them.
Note: Eggplant can get bitter with age and salting it helps draw out that bitterness. If you are using younger eggplants you can skip the salting and save some time.

    Perfect timing ! We are overloaded with produce from the farm markets in our area, eggplant and zucchini and tomatoes. I can only eat so much ratatouille .. this will be tomorrow nights dinner.

    I tried this last night and it's definitely not for me. I really prefer zucchini pizza instead of eggplant. I couldn't get it to "hold" the toppings. It fell apart and got really messy.

    I just made this recipe, but it turned out super mushy. They are too mushy to eat without a fork or spoon. What did I do wrong?

    Brittney Toon Caldwell: You want to pull them out of the oven before they turn mushy ad the baking time will vary depending on the thickness of the slices so you will need to keep an eye on them.

    I hate when people try to change your recipes. What I want to know is what the egg plant skin tastes like, I have never eaten the skin. Also, if I wanted bigger “little pizzas” could I slice the egg plant length wise, 1/4 in. thick ?
