Pizza Pizza Quesadillas (aka Pizzadillas)

All of the flavours of a pizza all wrapped up in quesadilla form and topped with even more pizza toppings!

I was immediately captivated by the idea of topping a quesadilla like a pizza when I first came across it a while ago! I mean you really cannot go wrong combining two great things like quesadillas and pizza! Ever since I made the taco quesadilla pizzas I have been wanting to try making pizza pizza quisadillas and I could not hold off on making them any longer! The basic idea is that you make a pizza quesadilla, stuffed with your favourite pizza ingredients including pizza sauce, mozzarella cheese, pepperoni and black olives, and then you top the quesadilla with more of the pizza toppings and quickly bake it to melt the cheese on top!

Tip: You want to make sure to toast the quesadilla well when you cook it so that the tortillas are nice and crispy so that they hold together even with the liquid from all of the pizza sauce.

Of course you do not have to top the pizza quesadillas with more pizza ingredients and the pizza quesadillas are certainly tasty enough to go without the extra toppings!

Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 20 minutes Servings: 2

All of the flavours of a pizza all wrapped up in quesadilla form and topped with even more pizza toppings!

ingredients
  • 2 (10 inch) tortilla
  • 1 cup mozzarella, shredded
  • 3 tablespoons pizza sauce
  • 16 slices pepperoni
  • 1 tablespoon sliced black olives
  • 3 tablespoons pizza sauce
  • 1/2 cup mozzarella, shredded
  • 3 slices pepperoni
  • 1 tablespoon sliced black olives
directions
  1. Heat a large pan over medium heat.
  2. Place one tortilla in the pan, sprinkle half of the cheese over it, followed by the pizza sauce, pepperoni, olives, the remaining cheese and finally the remaining tortilla.
  3. Cook until the quesadilla is golden brown on both sides and the cheese is melted, about 2-4 minutes per side.
  4. Spread the pizza sauce over the top of the quesadilla followed by the mozzarella, pepperoni and olives.
  5. Bake in a preheated 400F/200C oven until the cheese has melted, about 5-10 minutes.

    Made these today for four people. We each devoured an entire vegetarian-style Pizzadilla! I am a serious carnivore, but it was delicious with Italian Sausage style Tofurkey. Thanks, Kevin for a new go-to recipe for my collection. BTW, nice website and newsletter.
