Maple is one of my favourite flavours and it’s simply amazing in these cookies! These are the best kind of cookies: soft, chewy and melt in your mouth good on the inside and a little crispy along the edges! The maple flavour in the cookies comes from both maple syrup and maple extract and the icing adds even more, being made with maple syrup and powdered sugar! I like to add chopped pecans, or walnuts, and chocolate chops or toffee chips can also be added. These maple pecan cookies are an excellent addition to any holiday cookie splatter, and they are good any time of the year!
Maple Pecan Cookies
Soft and chewy cookies with the amazing aroma and flavour of maple, filled with pecans and topped with maple icing!
ingredients
- 1 cup (1/2 pound, 2 sticks) unsalted butter, room temperature
- 3/4 cup packed brown sugar
- 1/2 cup granulated sugar
- 1/4 cup maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon maple extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cornstarch
- 1/2 teaspoon salt
- 1 1/2 cups pecans, toasted and chopped
- 2 tablespoons unsalted butter
- 1/3 cup maple syrup
- 1 cup icing/powdered/confectioners sugar

- Cream the butter, brown sugar and granulated sugar before beating in the maple syrup, followed by the eggs, followed by the vanilla and maple extracts.
- Mix the flour mixture into the wet mixture before gently folding the pecans.
- Mix the flour mixture into the wet mixture until just combined, before mixing in the pecans.
- Scoop the dough, 1-2 tablespoons, at a time, form into balls and place them on baking sheets, lined with parchment paper (or a silicon baking mat), 2 inches apart from each other.
- Bake in a preheated 350F/180C oven until they just start to turn lightly golden brown along the edges, 8-10 minutes.
- Let cool before drizzling with the maple icing.
- Melt the butter into the maple syrup in a saucepan until melted and combined and remove from heat.
- Mix in the powdered sugar until smooth and drizzle over the cooled cookies.
