Who doesn’t enjoy a nice chili con queso cheese dip? Why not enjoy it for dinner, smothered over chicken? This chili con queso baked chicken is a super simple dish where chicken is covered in a chili con queso sauce, along with extra cheese, and baked! Once it’s baked, I like to sprinkle on some fresh diced tomatoes. Serve along with tortilla chips, (or steamed veggies) and pour the chili con queso sauce from pan over them!
Chile Con Queso Baked Chicken
Juicy chicken baked in a tasty queso cheese sauce that is super easy to make!
ingredients
- 2 tablespoons butter
- 2 tablespoons flour (or rice flour for gluten-free)
- 2 cups chicken broth (or milk)
- 1 cup cheddar cheese, shredded
- 1 cup salsa
- 1 pound boneless skinless chicken
- 1 teaspoon taco seasoning
- 1 cup cheddar cheese, shredded
- 1 cup tomato, diced
- 2 green onions, thinly sliced
- 1 tablespoons cilantro, chopped

- Melt the butter in a saucepan over medium heat until it foams and just starts to turn a light golden brown colour.
- Sprinkle in the flour, mix it into butter and cook until it’s a light golden brown colour, about 2-4 minutes.
- Add the milk, mix, bring to a simmer and cook until the sauce thickens a bit, about 2-3 minutes.
- Add the cheese and cook until it melts before mixing in the salsa and enjoying!
- Season the chicken with the taco seasoning and place in a baking pan.
- Pour thew queso sauce over the chicken
- Sprinkle on the cheese.
- Bake in a preheated 350F/180C oven until the chicken is cooked through, about 25-35 minutes.
- Sprinkle on the fresh diced tomatoes, green onions and cilantro and enjoy!

I made this for dinner last night. Incredibly tasty and quick and easy to make. I used two butterflied chicken breasts and half of the sauce recipe was more than enough. Baked it in a 9 x 9 pan. Thanks for the recipe, it’s a keeper!

I don’t see where in the recipe it says when to add the tomatoes, diced onions, and cilantro. Do you add it after the baked chicken is cooked or before it is cooked?
