Today I have a quick and easy dish that is both healthy and tasty, a baked chicken santa fe! This meal consists of chicken in taco seasoning that is baked on a bead of salsa, beans, corn and peppers which is smothered in plenty of melted cheese! This dinner is perfect for busy work nights as you can simply throw everything into a casserole dish and bake it in 30 minutes or less! You can easily throw extra veggies into the sauce and you can serve it over rice pasta, quinoa, etc. for an even heartier meal! The fun part of this meal is of course topping it with your favourite taco toppings like avocado, guacamole, pico de gallo, sour cream, cilantro, green onions, etc.
Baked Chicken Santa Fe
Quick, easy, healthy and tasty and baked chicken santa fe covered in melted cheese!
ingredients
- 1 tablespoon oil
- 1 pound boneless skinless chicken breasts
- 1 teaspoon taco seasoning
- 2 cups salsa
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup corn
- 1 cup bell pepper, diced
- 1 cup cheese (cheddar and/or Monterey jack, etc), shredded
directions
- Heat the oil in a pan over medium-high heat, add the chicken breasts, seasoned with the taco seasoning, and lightly brown on both sides.
- Mix the salsa, beans, corn and peppers, pour into a large baking dish, top with the chicken and bake in a preheated 350F/180C oven until the sides are bubbling and the chicken is cooked through, about 25-35 minutes before sprinkling on the cheese and returning to the oven until the cheese melts, about 2-3 minutes.
Option: Use store bought salsa for quick and easy or one of my favourite home made salsas like salsa ranchera, restaurant style salsa or roasted tomato salsa!
Option: Garnish with your favourite taco fillings such as avocado, guacamole, pico de gallo, sour cream, cilantro, green onions, etc.
Option: Serve over rice, pasta, tortillas, etc.

I made this tonight for dinner. It was very simple to put together and turned out very tasty. I made it in our toaster over which is pretty big and has a convection option. It took 30 minutes to cook the chicken through. I served it with some sauteed kale with garlic.
As for any ads, Google Chrome does a pretty good job of stopping any pop-up ads.

This was a very good recipe. I cooked it in the crockpot and shredded the chicken before serving over rice. We ate this with lime nachos and guacamole. Yummy!
