Easter Leftovers Recipes

The best ways to enjoy your Easter leftovers from the roast ham (or turkey, or lamb, etc.) to the hard boiled eggs and everything in between!

As much as I enjoy a roast dinner for the holidays I usually have more fun coming up with tasty ways to enjoy the leftovers! Ham is a common centerpiece of the Easter dinner and there are plenty of ways to make sure that any leftovers do not go to waste. Ham is great in soups, sandwiches and pretty much anything with eggs; speaking of which, there are also plenty of ways to enjoy any leftover hard boiled eggs from your Easter festivities! If you went for something else like a lamb, turkey or roast beef for dinner, I’ve got you covered with some tasty soups and sandwiches as well!

    Kevin,
    The recipes look yummy. I will be trying some soon, but I was wondering if you have any good ideas what to do with about almost 2 lbs of boneless roast leg of lamb?

    Barb: Is this uncooked or cooked? If uncooked I like this recipe: https://www.closetcooking.com/2009/01/roasted-lamb-in-coffee-sauce.html If it is cooked then gyros would be a great way to enjoy it!
